So, what I figured out is this: Because of my Account settings, certain settings were defaulting to on or off in my Desktop Client. IF AND ONLY IF a setting is visible/available within the in-meeting settings, that setting can temporarily override the Account and Zoom Client and Android settings, but only for the current meeting.
